Healthy Eating Made Simple – Quinoa Salad
Looking for a simple and healthy alternative to a traditional salad? Try this simple salad made with quinoa as part of your healthy eating plan. My entire family enjoys this one. I even started putting it in my kids’ lunch boxes when they got braces and had a hard time eating a sandwich.
Simple Quinoa Salad
- 1 cup cooked quinoa (follow package directions)
- 1.5 Tbsp of extra virgin olive oil’1.5 T fresh lemon or lime juice
- 1/2 large tomato, diced
- 1/2 large cucumber, diced (your preference on peeled or unpeeled)
- 1/4 red onion, diced
- Himalayan salt to taste.
- Mix cooked quinoa with olive oil, lemon or lime juice, and salt. Gently stir in the tomatoes, red onions, and cucumbers. Chill for 1 hour before serving.
Quinoa is an alternative to rice, couscous or pasta. It’s a relative of leafy green vegetables, like spinach and swiss chard. It’s also gluten free. Quinoa is food to add to your eating clean diet and on your way to get in shape fast. You can even serve it hot or cold, like in my salad recipe above. And it easily stays fresh in the refrigerator and is great for picnic, lunch boxes, and quick healthy snacks. Perfect for a healthy eating plan.
Quinoa is a complete source of protein containing all 9 essential amino acids and antioxidants, just like Shakeology. As an aside, Shakeology contains quinoa — it’s one of the 70+ super foods that make up this amazing meal/shake.
Quinoa is also high in magnesium, which is good for your cardiovascular system. And lastly, it also has some fiber in it which we know is good for keeping you full and good for your colon.
Quinoa is simple and quick to make. It usually comes in try form I bought mine at Trader Joe’s. You simply simmer it with water on the stove for about 15 minutes.
